Our Ice Wine will make any meal a special occasion and can pair exceptionally with each course. Try with fresh fruit or frozen grapes as an aperitif; Creole seasoned Crabcake or duck confit for dinner; or a small wedge of camembert cheese or stewed red wine poached pears for a great dessert match.

This is an Estate wine produced in the classic manner from vine frozen grapes hand-harvested and pressed immediately. Over the course of three days in January, three tons of Riesling fruit were hand-harvested and immediately pressed. The juice was added to an outdoor tank to stay cool. A few weeks into April, the juice chemistry dropped from 38 Brix to 30.8 Brix, indicating that the wine began fermenting without inoculation. The wine continued to ferment, and was stopped by cooling to a final wine chemistry of 7.8% alcohol and a 27.7% residual sugar, 3.44 pH, and 9.8 g/L TA.
