Tasting Notes

Nectarine and grey tea intermingle with hints of coconut and vanilla bean on the nose.  White flowers, slate, and lime dance on the palate to a soft, lingering finish.  Nothing but fruit and ambient yeasts went into the fermentation of this wine.

Additional Notes: The juice took about 4 days to show any signs of fermentation, and then fermented at 60-61F for 47 days before being stopped by chilling on 12/30/19.
