Tasting Notes

A blend of cold soak and saignée method, the wine's nose opens with tart raspberries and orange peel.  A soft mouth feel of strawberry and jasmine tea compliment a tart, red fruit finish.

Additional Notes: 198 gallons of the of fermenting juice from our Classic Merlot was drained off from the racking valve without skins (saignée process) to ferment separately for 29 days with BRL97 yeast, and blended with the wine from the first pressing on January 4, 2021.
